How do you like your steak cooked?
Blue Rare? Medium Rare? Well done?

Medium. Everyone makes a big deal about medium-rare but it comes out a bit cold for my tastes. If I wanted cold, I'd just eat a roast beef sandwich.

Usually at steakhouses, I get medium rare. It’s the hardest to fuck up. A lot of times, with medium, they cook it to well done and it’s just disgusting.

With medium rare, even if they fuck it up, the worst I’ll get is a medium. They always overcook more than undercook.

At the very top steakhouses with very premium meat, I enjoy a rare every now and then. Prefer medium rare, but when you get top quality marbling, as you say, a rare just melts in your mouth and it’s so tender/not chewy even when it’s rare.

But I only order that at the very best steakhouses.

Whenever I go to the keg and my steak is not to my liking, they will take it back and give me a new one done to my satisfaction. I don't make a habit of it, to send a steak back.

This is one of the reasons I go to the keg and its also located conveniently close by my place.
