I can tell you that if it is a minor offense then you make an application and pay a fee. If you have stayed out of trouble for 5 years your chances are good that they may expunge your record.

For the basics like staying at a motel or ordering lunch, you will have no problems. There are many unilingual French speaking people that go to Florida and they do OK.
